MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Concert Night Fish Categories: Fish Yield: 4 Servings 1 lb Perch fillets 1/2 lb Small flounder fillets 1 c Sherry Salt & pepper 3 tb Olive oil 1/3 c Onion; chopped 1/4 c Green pepper; chopped 1/2 c Mushrooms; sliced Salt & pepper 1/4 c Tomato; chopped 1/2 ts Thyme Salt & pepper Cover fish fillets with sherry and marinate for 1/2 hour. Arrange the fillets in an ovenproof container; salt and pepper to taste. Heat oil in a skillet and fry onion until it is half wilted. Add green pepper and cook until it is half wilted. Add mushrooms and cook until they are half wilted, adding a little salt to hasten the process. Add tomato. Season to taste with thyme and salt and pepper. Pile this mess onto the fish and stick the casserole into a 350 F oven. Take the marinade and boil it down just a bit. Pour it over the fish. Cook for maybe 20 minutes.
