MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Roslind's Fish cakes Categories: Fish Yield: 4 Servings 1 lb Fish; cooked, flaked 1 md Potato; peeled, grated 1/2 md Onion; peeled, minced 2 tb Parsley; chopped 1 Egg Fine dry bread crumbs or - crushed crackers Salt & pepper 1 pn Cayenne or other ground - chile pepper 1 tb Butter; for the pan With a fork, combine the fish with the grated potato and onion, parsley, and the egg. Add enough bread crumbs to make mixture firm enough to form into patties. Season to taste with salt, pepper and cayenne. Make four large patties. Saute in a non-stick skillet to brown nicely, about 10 minutes per side. Serve each portion topped with 1 ts Herb Butter. Dill, lemon thyme, lemon verbena, lemon balm, tarragon (especially with salmon, lake trout or char) and chives or scallion tops are all good additions to the parsley. JW MMMMM
