MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Lemon-Crusted Pacific Halibut Categories: Fish Yield: 4 Servings 1 bn Fresh parsley; reserve - some sprigs for garnish 10 sl White bread; crusts removed - and torn into pieces 2 md Lemons; juice & grated zest Salt and pepper 4 Fresh halibut fillets - (6 oz ea); 1/2" thick 1 1/2 tb Canola oil; divided Lemon wedges Wash parsley and remove stems. Process in a food processor with bread and zest for 2 minutes, or until bread turns green. Place in a low dish. Salt and pepper fillets. Set aside for 2 minutes. Roll one at a time in breading. Preheat a heavy-bottomed pan. Add 2-1/4 ts oil. Cook fillets one at a time over medium heat for 2 minutes a side, until opaque inside. After cooking 2 fillets add remaining oil. Remove from heat. Sprinkle with juice. Garnish with lemon wedges and parsley sprigs; serve. Note: If your fish fillets are thicker than 1/2", you may need to finish cooking them for a few minutes in a 325 F oven.
