MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Tilapia Florentine Categories: Seafood, Citrus, Greens, Cheese Yield: 4 Servings 6 oz Bag fresh baby spinach 6 ts Oil; divided 4 Tilapia fillets (4 oz ea) 2 tb Lemon juice 2 ts Garlic-herb seasoning blend 1 lg Egg; lightly beaten 1/2 c Ricotta cheese 1/4 c Parmesan cheese; grated Lemon wedges (optional) Additional Parmesan; grated - (optional) Set oven @ 375 F/190 C. In a large nonstick skillet, cook spinach in 4 ts oil until wilted; drain. Meanwhile, place tilapia in a greased 13x9" baking dish. Drizzle with lemon juice and remaining 2 ts oil. Sprinkle with seasoning blend. In a small bowl, combine the egg, ricotta cheese, and spinach; spoon over fillets. Sprinkle with Parmesan cheese. Bake until fish just begins to flake easily with a fork, 15 to 20 minutes. If desired, serve with lemon wedges and additional Parmesan cheese.
