* Exported from MasterCook Mac * Scallop or Shrimp Curry Recipe By : Eater's Choice, tpogue@idsonline.com Serving Size : 6 Preparation Time :0:00 Categories : Seafood Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 c Onion -- chopped 1 Apple -- peeled and chopped 2 cl Garlic -- minced 1 tb Curry powder 2 tb Margarine 1/4 c Flour 1/2 ts Salt 1/4 ts Cardamom 1/4 ts Pepper -- freshly ground 10 3/4 oz Nonfat chicken broth 1 tb Fresh lime juice 1 1/4 lb Scallops 1 c Mushroom -- sliced The lime and apple create a lovely sweet and sour taste In a large skillet, saute onion, apple, garlic, and curry powder in margarine until tender. Remove skillet from heat and blend in flour, salt, cardamom, and pepper. Stir in chicken broth and lime juice until curry sauce is well blended. Bring curry sauce to a boil, reduce heat, and simmer, uncovered for about 5 minutes. Stir occasionally. Meanwhile, place scallops or shrimp in a pot of boiling water and cook until just tender 5 to 10 minutes. Drain and set aside.
