* Exported from MasterCook II * Salmon With Orange Sauce Recipe By : UW Sea Grant Advisory Services Serving Size : 4 Preparation Time :0:00 Categories : Salmon Sauces Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 Salmon steaks or fillets - (6 to 8 oz ea) Steaming Liquid: 1 c Water -- up to 2 c 1 tb Salt -- up to 2 tb Orange Butter Sauce: 1/2 c Butter -- softened 1/2 c Fresh orange juice 1/2 ts Dried thyme leaves 1 to 2 cups of water are needed to steam the fillets, depending on the pan used. For each cup, add 1 tb salt and stir. Steam the fillets for 9 to 10 minutes or until they flake easily when tested with a fork. Blend the butter, orange juice, and thyme into a smooth butter, either by hand or in a blender. Remove the fillets to a serving platter and generously cover with the orange butter. Serve with a plain lettuce salad, peas, rice, and dinner rolls. Yield: 4 Servings - - - - - - - - - - - - - - - - - -
