* Exported from MasterCook * Scallops Provencal Recipe By : Philly Inquirer Serving Size : 4 Preparation Time :0:00 Categories : Seafood Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tb Full flavor olive oil 2 tb Fresh parsley -- chopped 2 tb Basil -- or more to taste 1 cl Garlic -- minced 2 oz Black olives -- chopped 1 lb Bay or sea scallops 1 ds Freshly ground pepper 2 lg Ripe tomatoes -- peeled - and coarsley chopped 1/2 c Green onions -- sliced thin 1/2 lb Mushrooms -- thinly slice Combine oil, garlic, and onion in 2 qt microwave safe casserole. Microwave on high 30 seconds. If using sea scallops quarter them. Add scallops to casserole and stir to coat. Stir in tomatoes, mushrooms, parsley, olives, pepper to taste, and 2 tb basil. Cover with wax paper and microwave on medium 3 minutes, stir. Cover again and microwave 2 to 4 minutes or until scallops are opaque and cooked through.
