* Exported from MasterCook * Italian Style Vegetables With Pasta (LF) Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Italian Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tb Vegetable stock * 1 Red pepper -- - seeded, coarsely chopped 1 Green pepper -- - seeded, coarsely chopped 1 Yellow pepper -- - seeded, coarsely chopped 2 sm Zucchini -- sliced 1/2" 1/2 md Red onions -- chopped 1 cl Garlic -- minced 14 oz Can peeled tomatoes in sauce 4 lg Sun-dried tomatoes -- - softened & chopped 2 tb Fresh oregano -- chopped -OR- 1/2 ts Dried oregano 2 tb Fresh basil -- chopped -OR- 1/2 ts Dried basil 1/2 ts Sea salt 1/2 ts Black pepper -- freshly ground 10 oz Your favorite pasta (4 servings) Heat a large skillet. Add the stock and all the ingredients except the pasta. Cover and cook over medium-low heat for 15 to 20 minutes, or until al dente. Cook the pasta according to the package directions. Drain well and serve with the vegetable sauce. Yield: 4 Servings * I used the water from soaking the sun-dried tomatoes instead of the vegetable broth.
