      Title: Eggplant Pizza
 Categories: Pizza, Vegetables, Cheese, Sauces
      Yield: 4 Servings
 
           French bread; cut as
           Desired
           Spaghetti sauce, homemade
           Eggplant; sliced into
           Rounds
           Olives
           Olive oil
           Mozzarella cheese
           Mushrooms
           Onions
           Bell pepper
 
  Cut the bread diagonally or lengthwise. Brush eggplant rounds with
  olive oil. Place on cookie sheet. Broil until toasted. Place pizza
  ingredients on bread. Bake at 350F for 20 minutes, then broil
  until browned on top.
  
  If you like eggplant this is very satisfying. I loved it. Tastes
  good cold in the morning too.
