MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Dolly Parton's Pimento Cheese Sandwich Categories: Cheese, Vegetables, Breads Yield: 6 servings 2 c Cheddar cheese; shredded 8 oz Cream cheese; softened, - diced 3 tb Dill pickles; diced 2 tb Pimentos; diced 2 tb Mayonnaise; heaping 1 lg Hard-boiled egg; peeled, - grated 1 pn Salt 1 pn Black pepper 12 sl Good white bread Put the shredded cheddar cheese and softened cream cheese in a large bowl. Mash them together with a large spoon or fork. Add in the diced pickles, diced pimentos, mayonnaise, grated hard-boiled egg, salt and pepper. Mix everything together until thoroughly combined. Divide the pimento cheese mix between six slices of white bread, and spread it evenly over each slice (feel free to cut the crusts off the bread). Top each one with the remaining slices of bread. Use a sharp knife to slice the sandwiches into halves. Or, slice each sandwich into four squares and skewer each one with a toothpick to make appetizers. Ediror's tip: You can also omit the white bread and serve the spread as a dip instead. Spoon the pimento cheese into a small serving bowl and place it on a plate with crackers, bagel chips or Melba toast.
