MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Polynesian Pulled Chicken Categories: Poultry, Sauces, Fruits, Vegetables, Breads Yield: 6 Servings 2 lb Chicken; boned, skinned 1 c Barbecue sauce 1 c Crushed pineapple; - undrained 1 md Onion; chopped 3/4 c Pepper strips; thawed 1/4 c Sweetened shredded coconut 1 tb Garlic; minced 1 tb Soy sauce 1 ts Salt 1 tb Corn starch 1/4 c Water 6 Hoagie buns; split Fresh cilantro; minced (optional) In a 3 or 4 qt slow cooker, combine the first 9 ingredients. Cook, covered, on low 3 to 4 hours or until a thermometer reads 165 F. Remove chicken; cool slightly. Meanwhile, in a small bowl, mix corn starch and water until smooth; gradually stir into cooking juices. Cook, covered, on high 15 to 20 minutes or until sauce is thickened. Shred chicken with two forks. Return to slow cooker; heat through. Serve with buns and, if desired, sprinkle with cilantro.
