      Title: Zucchini Peanut Butter Sandwich
 Categories: Sandwiches, Zucchini
      Yield: 4 Sandwiches
 
      2 c  Zucchini; grated, drained
      1 c  Carrots; grated
    1/4 c  Celery; chopped
    1/3 c  Peanut butter
    1/3 c  Mayonnaise
      8 sl Cracked wheat bread
           Lettuce leaves
 
  Combine squash with carrot, celery, and mayonnaise. Spread peanut
  butter on four bread slices. Top with vegetable mixture and lettuce
  leaf. Complete sandwich by adding bread slice spread with additional
  mayonnaise, if desired.
