In a large bowl, combine garlic powder, garlic salt, mustard, ginger, nutmeg, pepper, allspice, baking soda, and cayenne. Cut chicken wings into 3 sections; discard wing tips. Add to bowl with spices and stir to coat. In batches, arrange wings in a single layer on greased tray in air-fryer basket. Cook 15 minutes. Increase temperature to 400 F; cook until chicken juices run clear and wings are golden brown, 20 to 25 minutes, turning once. Repeat with remaining wings.
