* Exported from MasterCook * Crab and Mushroom Casserole Recipe By : Freeze With Ease copyright 1965 Serving Size : 6 Preparation Time :0:00 Categories : Casseroles Fish & Seafood Freezer Meals Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb Mushrooms -- sliced 8 tb Butter -- divided 1/3 c Flour 10 oz Chicken broth 1 1/2 c Medium or light cream Salt and pepper -- to taste 1 1/2 lb Fresh crabmeat -OR- 2 Cans crabmeat Buttered bread crumbs American cheese -- grated Saute mushrooms in 2 tb butter for 5 minutes and set aside. Melt 6 tb butter. Remove from heat and blend in flour. Add chicken broth, cream, salt, and pepper. Return to heat and cook until thickened and smooth. In 6-cup casserole arrange in alternate layers the mushrooms, sauce and crabmeat. Sprinkle with bread crumbs and cheese. Freeze. To Serve: Put frozen casserole in 325 F oven. Bake until brown and bubbly, 45 to 60 minutes. Defrosted casserole bakes at 350 F for 30 minutes. - - - - - - - - - - - - - - - - - -
