* Exported from MasterCook * Chicken Livers Risotto Recipe By : Freeze With Ease copyright 1965 Serving Size : 6 Preparation Time :0:00 Categories : Freezer Meals Main Dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 c Olive oil 1 c Rice 1 sm Onion -- chopped 2 c Chicken stock 1 cl Garlic -- crushed Salt -- to taste 1 pn Saffron 1/4 ts Powdered ginger 1 1/2 lb Chicken livers 1/2 lb Mushrooms -- sliced thin 1/4 c Butter 1/4 c Parmesan cheese -- grated Black pepper -- coarsely ground Brown rice in olive oil, stirring constantly. Add onion, chicken stock, garlic, salt, saffron, and powdered ginger. Cover pan tightly and simmer 20 minutes over low heat, until liquid is absorbed. Meanwhile quickly saute livers and mushrooms in butter. Add livers, mushrooms and pan juices to rice. Mix thoroughly. Freeze quickly. To Serve: Defrost at room temperature if you have time or by cooking in top of double boiler; adjust seasonings. Sprinkle with parmesan cheese and black pepper. - - - - - - - - - - - - - - - - - -
