McIntosh Serving Size : 24 Preparation Time :0:00 Categories : Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 9 oz Fresh cheese tortellini -- - uncooked 15 oz Can garbanzo beans -- drained 14 oz Can artichoke hearts -- - drained and quartered 11 1/2 oz Jar pepperoncini peppers -- - drained 1 pt Small cherry tomatoes 8 oz Small fresh mushrooms 1 c Carrot -- julienne cut 1 c Celery -- julienne cut 1 c Green pepper -- julienne cut 1 c Yellow squash -- julienne cut 1/2 c Whole ripe olives Antipasto Vinaigrette Cook tortellini according to package directions, omitting salt and fat; drain well. Combine cooked tortellini, garbanzo beans, and next 9 ingredients in a large bowl. Pour Antipasto Vinaigrette over vegetable mixture; toss gently to coat. Cover and chill mixture at least 4 hours.
