---------- Recipe via Meal-Master (tm) v8.05 Title: Red Pepper Bruschetta with Feta Categories: Appetizers, Breads Yield: 18 Slices 7 oz Jar roasted red peppers Drain/chop 1 Cl garlic; chop fine Olive oil 1 ts Lemon juice 1/4 c Scallions; chop fine 4 oz Feta; crumble or chop fine 1 Loaf French bread; 1/2" sl In a medium bowl, mix together the peppers, garlic, 1tb olive oil, lemon juice, scallions and cheese. Set aside. Lightly brush the bread slices with olive oil and place on a baking sheet. Broil (or grill) on each side until lightly toasted. Top each slice with about 1 tb of the pepper mixture.
