                            Cheese Pepper Dip

  24      oz            Cacique(R) brand Asadero cheese
   6                    Pasilla chilies --
                        - roasted and peeled
   2      tb            Garlic -- minced
     1/2  c             Cilantro -- chopped
   6                    Red or green bell peppers --
                        - roasted and peeled
                        Salt and pepper -- to taste
                        Tortilla chips -OR-
                        Fresh corn tortillas

Slice the chilies and the bell peppers into thin strips. Slowly melt
the Asadero cheese over low flame and add the chilies, garlic, and
cilantro and stir with a wooden spoon. Add salt and pepper and serve
with the tortilla chips or fresh corn tortillas.
