MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Baked Chorizo Corn Dip Categories: Pork, Vegetables, Chilies, Cheese Yield: 9 Cups 1 lb Fresh chorizo 30 1/2 oz (2 cans) whole kernel corn; - drained 1/2 c Red bell pepper; - fine chopped 1 c Jalapenos; stemmed, seeded, - fine chopped 6 Green onions; chopped 1 c Mayonnaise 1/2 c Parmesan cheese; grated 1 1/2 ts Chilli spice mix 1 cl Garlic; minced 3 c Monterey Jack cheese; - shredded Tortilla chips Set oven @ 350 F/175 C. In a large skillet, cook chorizo over medium heat until cooked through, 6 to 8 minutes, breaking into crumbles; drain. In a large bowl, combine cooked chorizo and the next 9 ingredients. Transfer to an ungreased 10" cast-iron skillet or 9x13" baking dish. Bake until heated through, 30 to 35 minutes. Serve warm with tortilla chips.
