* Exported from MasterCook * Ketchup Au Fruits (Fruit Ketchup)--Modified Recipe By : Original Recipe by Teresa Momy Serving Size : 1 Preparation Time :0:00 Categories : Condiments Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 20 lg Red tomatoes -- skins removed 4 lg Apples -- peeled & chopped 4 Pears -- peeled & cored, chopped - into large chunks 5 Peaches -- skins removed, - chopped into large chunks 3 1/4 c Granulated sugar 2 1/2 c White vinegar 4 lg Onions -- chopped 2 tb Pickling salt 2 lg Green peppers -- coarselyu - chopped 1 lg Red pepper -- coarsely chopped 3/4 Celery stalk -- chopped 1 tb Pickling spice -- unnecessary - to put in bag Original Recipe From Teresa: 15 Tomatoes 3 Apples 3 Pears 3 Peaches 3 c Sugar 2 1/2 c Vinegar 3 Onions 1 1/2 tb Pickling salt 1 Green pepper 1/2 Celery stalk 1 ts Pickling spice Simmer all ingredients approximately 2 to 2-1/2 hours on low/medium heat until desired consistency. Yield: 7 Quarts Sherilyn's Notes: If fruits are overly ripe, cook celery, peppers, onions, and apples at least 30 minutes ahead of adding ripened fruit. The fruits will say firmer through the cooking process. Because I like a thicker type pickle and I increased the amount of fruit in this recipe.
