MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Basic Brown Sauce Categories: Sauces Yield: 2 Cups 2 c Vegetable broth 2 tb Tamari 1 tb Corn starch; dissolved in: 2 tb Water Salt Black pepper; freshly ground Instead of the traditional roux thickener (butter or oil and flour), this sauce is thickened with corn starch. Additions to this infinitely versatile sauce include minced herbs, sauteed shallots, or a splash of wine. It can also be transformed into a creamy gravy with the addition of 1/4 cup plain unsweetened nondairy milk. Use it like a gravy over mashed potatoes, rice, vegan meatloaf or burgers, stuffed portobellos, or sauteed seitan. Combine the broth and tamari in a small saucepan over high heat and bring to a boil. Reduce heat to low, whisk in corn starch mixture, and stir until the sauce thickens, 2 to 3 minutes. Season to taste with salt and pepper and serve hot.
