                             Spicy Cilantro Butter

  40      ml            Garlic -- minced
   4      tb            Fresh cilantro -- chopped,
                        - generous
   2                    Jalapenos -- seeded, minced -OR-
   1                    Red serrano -- seeded, minced
   1      ts            Fresh lime zest
                        Salt -- to taste
                        Crushed dried red chile --
                        - to taste
     1/2  c             Untalted butter -- softened

To make each sauce, mix all the ingredients together well. Melt to
serve.
