* Exported from MasterCook * Basic Tomato Sauce Recipe By : Rita Taule (BTVC62A) in Scottsdale, Mar 1992 Serving Size : 4 Preparation Time :0:00 Categories : Sauces Italian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 c Olive oil 1 ts Salt 1 md Onion -- chopped 1/2 ts Pepper 3 cl Garlic -- minced 1/2 ts Sugar 28 oz Can crushed tomatoes 1/4 c Fresh parsley -- chopped 28 oz Can Italian style tomatoes 1/4 c Fresh basil -- chopped 1 Bay leaf Saute onion and garlic in olive oil in medium saucepan until translucent. Put Italian style tomatoes in blender; puree, and pour into saucepan. Add can of crushed tomatoes. Add Italian seasoning, bay leaf, salt, pepper, and sugar. Simmer, covered, for 1 hour. Add fresh parsley and chopped basil and simmer another 15 minutes. If you would like to add browned ground beef, meatballs, or sausage.. this would be the perfect sauce to do so. If you prefer a thicker sauce, add 1 to 2 tb tomato paste. I personally just don't think it needs it. - - - - - - - - - - - - - - - - - -
