* Exported from MasterCook * Mushroom Sauce For Spaghetti (Portabella) Recipe By : Will Decker, Not a Prodigy Special Contributor Serving Size : 1 Preparation Time :0:00 Categories : Sauces Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb Mushrooms -- sliced * 4 oz Olive oil 1 c Dry vermouth 2 tb Garlic -- minced 8 Plum tomatoes -- peeled & seed 2 Shallots -- sliced Fresh basil -- chopped Fresh parsley -- chopped Fresh black pepper * Best to use a combination of mushrooms, oyster, shiitake, and portobella. In a saute pan heat half the oil and saute mushrooms until wilted. Add the vermouth and reduce the liquid by half Set aside. In a saucepan heat the remaining oil until almost smoking. Toss in the tomatoes, garlic, and shallots and braise under high heat for 4 to 5 minutes. Add the mushrooms, reduced liquid, and remaining ingredients.
