MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: French Market Soup #2 Categories: Soups, Sausage, Pork, Wine Yield: 1 Servings Beans Peas 1 lb Sausage; sliced Ham hocks 28 oz Tomatoes; canned 2 Chicken breasts; -boned and skinned 4 Celery ribs 1/2 c Red wine 2 cl Garlic 1/2 c Parsley; chopped Salt and pepper Bay leaf Thyme Basil Wash beans and peas. Cover with water, soak overnight. Drain beans, add 3 quarts water, ham hocks, bay leaves, thyme & basil. Simmer 2 1/2 to 3 hours. Add tomatoes, onions, celery, salt and pepper. Simmer 1 1/2 hours until creamy. Add sausage, chicken and simmer 30 to 40 minutes. Before serving add red wine and parsley. Best if refrigerated for a day before serving.
