MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Slow-Cooker Sweet Potato Soup Categories: Potatoes, Vegetables, Herbs, Chilies, Poultry Yield: 8 servings 3 lb Sweet potatoes; peeled, in - 1" cubes 2 tb Butter 1 tb Worcestershire sauce 1 ts Dried minced onion 1 ts Dried celery flakes 1/2 ts Salt 1/2 ts Pepper 1/4 ts Dried thyme 1/8 ts Ground chipotle pepper 6 c Chicken broth Optional: Sour cream and pepitas In a 4 or 5 qt. slow cooker, combine all ingredients except sour cream and pepitas. Cook, covered, on low until potatoes are tender, 5-6 hours. Puree soup using an immersion blender. Or, cool slightly and puree soup in batches in a blender; return to slow cooker and heat through.
