MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Savory Asparagus Soup Categories: California, Soups, Vegetarian Yield: 4 Servings 1 Sweet onion; chopped 1/2 Garlic head; minced 20 Asparagus spears; chopped 1/2 c Olive oil 1 ts Onion powder 1 ts Montreal steak seasoning 2 tb Butter 2 1/2 c Vegetable broth 1 ts Black pepper 1/2 ts Turmeric 1 ts Salt; or more to taste 8 oz Can crispy fried onions Chop the onion fine and mince the garlic. Cut off tips of the asparagus spears and set aside. Chop the rest of the stalks into 1" sections. Saute onions, garlic, and asparagus sections in olive oil in a pot over medium heat, sprinkling the onion powder and Montreal steak seasoning and stirring the butter into the vegetable medley once it's hot and sizzling. When the vegetables are soft, after about 8 minutes, add broth, black pepper, turmeric, and salt, and turn down the temperature to low-medium, so the mixture reaches a gentle bubble. Allow to simmer for 15 to 20 minutes. While the soup mixture is simmering, saute the asparagus tips in olive oil until they appear crisp and bright green. After the vegetables are tender and the soup has thickened somewhat, use a hand mixer to blend the soup or pour it into a blender and puree it. Either way, the soup should look creamy and cohesive in the pot before serving. Once the soup is blended, fill individual soup bowls and generously garnish with the sauteed asparagus tips and crispy fried onions. Every spoon will make you swoon.
