* Exported from MasterCook * Minestrone Recipe By : Mary Wilson (BWVB02B) Serving Size : 6 Preparation Time :0:00 Categories : Beans Italian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tb Fresh parsley -- chopped 1/4 c Olive oil 2 ts Dried basil leaf 1 md Onion -- sliced 1 ts Dried oregano leaf 2 cl Garlic -- minced 1 ts Salt 2 Carrots -- sliced 1/4 ts Pepper 2 Celery ribs -- sliced 30 oz Cannellini or dark-red kidney - beans (2 cans) 1 Leek -- sliced 28 oz Can Italian plum tomatoes -- - drained 2 c Cabbage -- shredded 1 qt Chicken broth -OR- 29 oz Regular strength chicken broth - (2 cans) 1/2 c Uncooked elbow or small macaroni Parmesan cheese -- fresh grated Heat olive oil in a 4 qt pot. Add onion, garlic, carrots, celery, and leek. Saute until onion is tender. Add tomatoes with liquid, breaking up tomatoes with knife and fork. Stir in broth, parsley, basil, oregano, salt, and pepper. Bring mixture to a boil; reduce heat. Cover and simmer 20 minutes. Stir in beans and cabbage. Simmer 10 minutes longer. Stir in zucchini and macaroni. Simmer, uncovered, 10 minutes. Serve with Parmesan cheese. Yield: 6 Servings - - - - - - - - - - - - - - - - - -
