MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Meatball and Spinach Soup Categories: Soups, Turkey, Groundmeat, Chilies Yield: 6 Servings 5 c Cold water 1 tb Fresh or instant low-sodium Miso 1 1/2 lb Fresh spinach, washed and Coarsely chopped MEATBALLS: 4 oz Lean ground turkey 1 tb Minced fresh ginger 1 tb Minced fresh garlic 2 Green onions, minced 2 ts Cornstarch 1 Egg white 1/2 ts Chopped sesame seeds 1/8 ts Chili pepper flakes You may substitute lean ground beef or pork for the ground turkey in this soup. Bring the water and miso to a boil in a large pot. (If using fresh miso, dilute in a little water before adding to the pot). While waiting for the water to boil, prepare the meatballs. In a large bowl, thoroughly mix together all of the meatball ingredients. Form the mixture into small meatballs. When the water comes to a boil, add the meatballs, one at a time. Reduce the heat and simmer for 8 minutes. Add the spinach and bring to a boil. Cook for 4 minutes. Serve hot.
