* Exported from MasterCook * Ham and bean soup Recipe By : Amish Cooking Serving Size : 6 Preparation Time :2:00 Categories : Soups & Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb Navy beans -- See directions 10 c Water 2 lg Ham shanks -- see directions 1 cl Garlic -- minced 1 sm Bay leaf -- see directions 1 c Potatoes -- cubed 1 c Celery -- thinly sliced 1 c Onion -- finely chopped 1 c Carrots -- cubed Salt -- to taste Pepper -- to taste Boil the beans in the water for 2 minutes before removing them from the heat to let stand for 1 hour. Then add the ham shanks, garlic, and bay leaf to the beans and cover and simmer for 2 hours or until the ingredients are almost tender. Add the vegetables and salt and pepper to taste and simmer them for 1 hour longer. Remove the ham shanks, cut off the meat and dice it to add back to the beans.
