MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cream of Potato Soup #2a Categories: Soups Yield: 8 Servings 6 md Potatoes 1 c Butter; less to taste, or - substitute part bacon fat 1 md Onion; chopped fine 3 c Milk; heated to not quite boiling Salt Pepper Dice potatoes and cook in salt water. Saute onion in butter, seasoning with pepper and salt, until very tender but just slightly colored. When potatoes are tender, drain them; add butter and onions, mix well, and puree to desired consistency. Then gradually add hot milk. Return near but not to the boil, stirring.
