* Exported from MasterCook * WW White Bean Soup Recipe By : Weight Watchers Quick Start Cookbook Serving Size : 2 Preparation Time :0:00 Categories : Soups Weight Watchers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 ts Olive or vegetable oil 1/2 c Carrot -- diced 1/2 c Celery -- diced 1/4 c Onion -- finely diced 1 cl garlic -- minced 1 1/2 c Water 1/2 c Tomato sauce 1/4 ts Basil leaves 1/4 ts Salt 1/8 ts Thyme 1/8 ts Pepper 4 oz Canned small white beans -- - drained 2 ts Fresh parsley -- chopped In 1-1/2 or 2 qt saucepan heat oil; add carrot, celery, onion, and garlic and saute until vegetables are tender. Stir in water, tomato sauce, and seasonings, and bring mixture to a boil. Reduce heat and let simmer for 15 minutes. Stir in beans and cook until throughly heated, about 5 minutes longer. Serve each portion sprinkled with 1 ts parsley.
