MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Big Batch Cheeseburger Soup Categories: Beef, Vegetables, Potatoes, Cheese, Dairy Yield: 6 servings 1 lb 90% lean ground beef 1 sm Onion; chopped 1 3/4 lb Potatoes; peeled; in 1/2" - dice 3 c Chicken broth 1 1/2 c Whole milk 2 md Carrots; shredded 1 Celery rib; fine chopped 1 tb Dried parsley flakes 1/2 ts Salt 1/2 ts Dried basil 1/4 ts Pepper 8 oz Velveeta; diced 1/4 c Sour cream Fresh parsley; chopped, (optional) In a large skillet, cook beef and onion over medium heat until meat is no longer pink, 6-8 minutes; crumble beef; drain. Transfer to a 4 or 5 qt slow cooker. Add potatoes, broth, milk, carrots, celery and seasonings. Cook, covered, on low until vegetables are tender, 7-9 hours. Stir in cheese until melted.
