MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cream Of Mushroom Soup Categories: Soups Yield: 4 Servings 1/2 lb Button mushrooms; wiped -clean and cut into tiny -dice 1 tb Onion; minced fine 3 tb Butter 2 tb Flour Thyme Salt & pepper 1 1/2 c Stock 2 tb Sherry; or to taste 1 c Cream; the heaviest you have Saute mushrooms and onion in butter until softened and beginning to brown. Remove with a slotted spoon and set aside. Heat the butter quite hot, adding more if necessary, and make a roux using the flour and seasonings. When it's a light blond, whisk in the stock and bring to the boil. Dump in a little sherry, using the best you have, and then the mushrooms. Return to the boil and add the cream.
