---------- Recipe via Meal-Master (tm) v8.01 Title: Mushroom and Barley Soup Categories: Soups/stews Yield: 9 Cups 1/2 c Pearl barley 1 cl Garlic; minced 1/2 c Onion; finely chopped 1/2 c Celery; finely chopped 4 tb Butter 8 c Chicken broth 3/4 lb Mushrooms (4 c); chopped Salt and white pepper; to taste Soak barley in water overnight. Saute garlic, onion and celery in butter until tender. Drain barley and add to vegetables. Saute 10 minutes longer, until barley becomes thick.
