MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Sausage & Spinach Tortellini Soup Categories: Pork, Pasta, Greens, Vegetan\les, Cheese Yield: 2 servings 1/2 lb Italian sausage 1 sm Onion; thin sliced 1 cl Garlic; minced 14 1/2 oz Can chicken broth 1/2 c Water 1 1/2 c Fresh spinach; torn 3/4 c Refrigerated cheese - tortellini 2 tb Parmesan cheese; shredded Crushed red pepper flakes - (optional) In a small saucepan, cook sausage over medium heat until no longer pink; drain. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer. Stir in broth and water; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Return to a boil. Reduce heat; add spinach and tortellini. Cook until tortellini is tender, 7-9 minutes. Sprinkle with cheese. If desired, top with crushed red pepper flakes.
