MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Luby's Chicken Noodle Soup Categories: Chicken, Soup Yield: 4 Servings 2 1/2 c Wide egg noodles 1 ts Vegetable oil 12 c Chicken broth 1 tb Salt; +1-1/2 ts 1 c Celery; chopped 1 c Onion; chopped 1/3 c Corn starch 1/4 c Water 3 c Chicken; cooked and diced In a medium saucepan, bring about 4 cups of water to a boil. Add the noodles and oil. Boil for 8 minutes. Drain and rinse the noodles under cool running water. In a large saucepan or Dutch oven, bring the broth and salt to a boil. Stir in the celery and onion. Reduce the heat to a simmer. Cover and simmer for 15 minutes. Add the cooked noodles. In a small bowl, mix the corn starch and water until the corn starch is completely dissolved. Gradually add the mixture to the soup, stirring constantly. Add the cooked chicken and heat through.
