MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Spinach & White Bean Soup Categories: Beans, Greens, Herbs, Vegetables Yield: 6 Servings 2 ts Olive oil 3 cl Garlic; minced 45 oz Cannellini beans (3 cans); - rinsed, drained, divided 1/4 ts Pepper 4 c Vegetable or chicken broth 4 c Fresh spinach (3 oz); chopped 1/4 c Fresh basil; thin sliced Parmesan cheese; shredded - (optional) In a large saucepan, heat oil over medium heat. Add garlic; cook and stir until tender, 30 to 45 seconds. Stir in 2 cans of beans, pepper, and broth. Puree mixture using an immersion blender. Or puree in a blender and return to pan. Stir in remaining can of beans; bring to a boil. Reduce heat; simmer, covered, 15 minutes, stirring occasionally. Stir in spinach and basil; cook, uncovered, until spinach is wilted, 2 to 4 minutes.
