MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Coconut Shrimp Chowder Categories: Seafood, Vegetables, Herbs, Citrus, Fruits Yield: 5 Servings 1 md Onion; chopped 2 ts Oil 1/4 ts Cayenne pepper 2 c Chicken broth 10 oz Box frozen corn 1/4 ts Salt 1/4 ts Pepper 13 2/3 oz Can coconut milk 1 lb Uncooked U-40 shrimp; - peeled, deveined 1/4 c Lime juice 2 tb Fresh cilantro; minced 1 md Ripe avocado; pitted, diced In a large saucepan, saute onion in oil until tender. Add cayenne pepper. Stir in the broth, corn, salt, and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Remove from the heat and stir in coconut milk. Cool slightly. In a food processor, process soup in batches until blended. Return all to pan. Add shrimp; cook and stir over medium heat for 5 to 6 minutes or until shrimp turn pink.
