MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Coconut Curry Vegetable Soup Categories: Vegetables, Herbs, Potatoes, Rice Yield: 6 servings 1 tb Oil 2 Celery ribs; chopped 2 md Carrots; chopped 6 cl Garlic; minced 1 tb Fresh ginger; minced 2 ts Curry powder 1/2 ts Ground turmeric 14 1/2 oz Can vegetable broth 13 2/3 oz Can light coconut milk 1 md Potato; peeled, chopped 1/2 ts Salt 8 13/16 oz Pkg ready-to-serve brown - rice Lime wedges (optional) In a large saucepan, heat oil over medium heat. Add celery and carrots; cook and stir 6 to 8 minutes or until tender. Add garlic, ginger, curry powder, and turmeric; cook 1 minute longer. Add broth, coconut milk, potato and salt; bring to a boil. Reduce heat; cook, uncovered, 10 to 15 minutes or until potato is tender. Meanwhile, heat rice according to package directions. Stir rice into soup. If desired, serve with lime wedges.
