MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Quick Mushroom Barley Soup Categories: Grains, Vegetables, Mushrooms, Soups Yield: 6 Servings 1 tb Olive oil 1 c Fresh mushrooms; sliced 1/2 c Carrot; chopped 1/3 c Onion; chopped 2 c Water 3/4 c Quick-cooking barley 2 tb A-P flour 3 c Whole milk 1 1/2 ts Salt 1/2 ts Pepper Fresh parsley; chopped - (optional) In a large saucepan, heat oil over medium heat. Add mushrooms, carrot, and onion; cook and stir 5 to 6 minutes or until tender. Add water and barley. Bring to a boil. Reduce heat; simmer, uncovered, 12 to 15 minutes or until barley is tender. In a small bowl, mix flour, milk, salt, and pepper until smooth; stir into soup. Return to a boil, stirring constantly; cook and stir 1 to 2 minutes or until thickened.
