MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Smokey Navy Bean And Kale Soup Categories: Soup Yield: 8 Servings 1 Onion; diced 2 Carrots; diced 4 Stalks celery; chopped 6 Cloves garlic; minced 2 md Yukon gold potatoes; cubed 1 Jar marinated artichokes 1 Jar sun-dried tomatoes in -oil 5 c Cooked navy beans 1 bn Kale; chopped 2 tb Veggie bouillon 2 tb Liquid smoke 1 tb Salt; to taste 1 ts Black pepper; to taste 1 tb Italian seasoning 1 ts Red chili flakes; to taste In a large pot add oil from sun-dried tomatoes and saute onions, carrot, celery, and garlic until tender. Then add chopped artichoke hearts & brine, chopped potatoes, pre-cooked beans, water, and veggie bouillon with seasonings. Take 1/4th of the soup and puree in a blender. Add back to the soup to thicken. (Another option is to dip an immersion blender in the soup and blend until it reaches the desired consistency.) Add chopped kale and chopped tomatoes.
