* Exported from MasterCook * Hazelnut Squash Soup Recipe By : Oregon Hazelnut Serving Size : 6 Preparation Time :0:00 Categories : Squash Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 c Squash -- cooked & mashed -OR- 12 oz Pkg frozen cooked squash 1 c Hazelnuts -- finely chopped 1/2 c Onion -- finely chopped 1 qt Chicken broth or stock Salt to taste 1/4 ts Pepper 2 tb Butter 2 tb Sherry Combine squash, hazelnuts, onion and broth in saucepan. Bring to a boil; cover and simmer 30 minutes, stirring occasionally. Stir in salt to taste, pepper, butter and sherry. Garnish with roasted and sliced hazelnuts, if desired.
