MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cucumber and Melon Soup Categories: Soups, Australian, Chicken, Chilies, Fruit Yield: 4 Servings 1 md Lebanese cucumber, peeled, - seeded and chopped 1 sm Honeydew melon, peeled, - seeded and chopped 250 g Greek style (natural) - yoghurt 2 c Chicken (or vegetable) - stock 2 c Sparkling mineral water 2 tb Chopped basil leaves 1/2 ts Sugar 2 tb Fresh mint, finely chopped 1 ts Fresh coriander, chopped 6 dr Tabasco or to taste Place cucumber, and melon in processor, blend until smooth, adding yoghurt, stock and mineral water to required taste and consistency. Using a knife blade on a board, crush basil and sugar to a paste. Stir into soup with mint, coriander and Tabasco. Chill for at least 2 hours to allow flavours to infuse.
