MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Gluten-Free Oatmeal Cookies Categories: Cookies, Snacks, Grains, Spices Yield: 60 servings 1 c Butter; softened 1 c Brown sugar; packed 1/2 c Sugar 2 lg Eggs; room temperature 1 ts Vanilla extract 2 c Gluten-free A-P baking - flour 3 ts Baking powder 2 ts Ground cinnamon 1/2 ts Baking soda 1/2 ts Salt 1/2 ts Ground nutmeg 2 c Quick-cooking oats Set oven @ 350 F/175 C. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour, baking powder, cinnamon, baking soda, salt, and nutmeg; gradually add to creamed mixture and mix well. Stir in oats. Drop dough by tablespoonfuls 2" apart onto ungreased baking sheets.
