MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Gluten-Free Pancakes Categories: Breads, Nuts, Chocolate Yield: 6 servings 1 c Brown rice flour 1/2 c Potato starch 1/2 c Ground almonds 3 ts Sugar 3 ts Baking powder 1/2 ts Salt 2 lg Eggs; room temperature 1 c Milk 2 tb Butter; melted 1 ts Vanilla extract 1/3 c Miniature semisweet - chocolate chips In a large bowl, combine rice flour, potato starch, almonds, sugar, baking powder, and salt. In another bowl, whisk eggs, milk, butter and vanilla; stir into dry ingredients just until moistened. If desired, stir in chocolate chips. Preheat griddle over medium heat. Lightly grease griddle. Pour batter by 1/4 cupfuls onto a hot griddle; cook until bubbles on top start to pop and bottoms are golden brown. Turn; cook until second side is golden brown.
