MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Best Gluten-Free Chocolate Cake Categories: Cakes, Desserts, Chocolate, Nuts Yield: 16 servings 2 c Gluten-free A-P baking flour; - +3 tb, divided 2 c Sugar 3/4 c Baking cocoa 1/4 c Ground flaxseed 1/4 c Chia seeds 2 ts Baking powder 1 1/2 ts Baking soda 1 ts Salt 2 ts Instant espresso powder 1/2 ts Xanthan gum 1 c Boiling water 1 c Unsweetened almond milk 1 c Canola oil 4 ts Vanilla extract Confectioners' sugar Set oven @ 350 F/175 C. Grease and flour a 10" fluted tube pan using 3 tb gluten-free flour. In a large bowl, whisk the remaining 2 cups flour and next 9 ingredients. In another bowl, combine water, almond milk, oil, and vanilla until well blended. Gradually beat flour mixture into milk mixture. Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 50-55 minutes. Cool in pan 15 minutes before removing to wire rack to cool completely. Dust with confectioners' sugar before serving.
