MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Gluten-Free Snowballs Categories: Cookies, Snacks, Nuts Yield: 72 Cookies 1 c Butter; softened 1/2 c Confectioners' sugar 1 ts Vanilla extract 1 1/4 c Potato starch 1 c Corn starch 1 ts Xanthan gum 1/4 ts Salt 3/4 c Walnuts or pecans; chopped Additional confectioners' - sugar In a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in vanilla. Combine the potato starch, corn starch, xanthan gum, and salt; gradually add to creamed mixture and mix well. Stir in walnuts. Cover and refrigerate for 1 hour or until easy to handle. Shape into 1" balls; place 2" apart on ungreased baking sheets. Bake @ 400 F/205 C for 9-11 minutes or until set. Cool on pans for 2 minutes before removing to wire racks. Roll warm cookies in confectioners' sugar. Cool completely on wire racks. Reroll in confectioners' sugar.
