MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Quinoa And Pan-Fried Corn With Orange Zest And Basil Categories: Grains Yield: 4 Servings 3 c Vegetable broth 1 1/2 c Quinoa; rinsed, drained 1 tb Olive oil -OR- 1/4 c Water 2 c Corn kernels; - fresh or thawed 5 Scallions; minced 1 tb Orange zest; grated Salt Black pepper; freshly ground 2 tb Fresh basil; chopped Bring the broth to a simmer in a large saucepan over medium heat. Stir in the quinoa, cover, and reduce the heat to low. Simmer until all of the water is absorbed, 12 to 15 minutes. Heat the olive oil or water in a medium-sized skillet over medium heat. Add the corn and scallions and cook, stirring, until fragrant, about 3 minutes. Add the contents of the skillet to the quinoa. Stir in the orange zest and salt and pepper to taste.
