MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cottage Cheese Biscuits Categories: Cheese, Dairy, Chilies Yield: 8 Servings 2 c Flour; sifted 1 tb Baking powder 1 ts Salt 1/4 ts Cayenne pepper 1/2 ts Celery seed 1/4 c Soft butter 1/2 c Cottage cheese 3/4 c Evaporated milk Set oven @ 425°F/218°C. In a bowl, combine flour, baking powder, salt, cayenne pepper, and celery seed. Cut butter into dry ingredients with a pastry blender until the mixture looks like coarse corn meal. Add the cottage cheese and milk. Mix with a fork or wooden spoon. Turn dough onto a lightly floured board and knead gently. I recommend having at least 1/4 cup of flour in a small pile on the side of your board. The dough is rather sticky right after mixing, and you'll need to add more flour while kneading and folding the dough. Add extra flour, as needed, a little bit at a time, until the dough just stops being sticky. Roll dough about 1/2" thick and cut into biscuits. Bake for 12 to 15 minutes until brown. Cool for at least 5 minutes, then serve hot, warm or at room temperature. You can brush them with melted butter right after they come out of the oven for a little extra richness!
